Q. Hey Jenny, I love avocados but find that they ripen more quickly than I can use them. Is there a way to preserve them and not waste them and my money too?

A. Absolutely! It's always disappointing when avocados ripen faster than we can enjoy them. The good news is there's a simple and cost-effective way to preserve them — freeze them!

  • In a bowl, mash the ripe avocado pulp with a splash of lemon juice. Then scoop the avocado into portions, similar to how you’d portion cookie dough.
  • Place the scoops on a parchment-lined baking sheet, freeze them, and then transfer them into labeled zip-lock bags.
  • When you're ready to use your frozen avocado, remove it from the freezer and let it thaw at room temperature for about one hour. Then you’ll be ready to make guacamole, avocado toast, salad dressing or smoothies.
